Avocado, Bacon and Halloumi Breakfast Roll
Ingredients
- 4 Sourdough or Brioche rolls
- 4 bacon slices
- 2 ripe avocados sliced
- Jar of tomato relish
- 4 slices fresh tomato
- 4 slices Halloumi cheese 1cm thick
- Handful of rocket leaves
- 4 eggs (optional)
Method
- Heat a medium non-stick frying pan over medium heat, add bacon slices and cook on each side, until browned ( I like mine crispy). Remove from frying pan and set aside.
- In the same pan over medium heat, add halloumi slices. Cook for about 2 minutes on each side, until browned, softened and cooked through. Be careful not to overcook them. You can fry the eggs if you are adding.
- Assemble burgers: spread layer of tomato relish on the base of each roll. Top with avocado slices, bacon, halloumi, tomato, egg and rocket.
- Serve immediately
